Ingredients:
- 1 medium butternut squash, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tsp curry powder
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
Put butternut squash, onion, carrots, and garlic in a blender
Put in the curry powder, coconut milk, vegetable broth, salt, and pepper
Mix until its creamy and smooth
Put the mixture in a pot and cook it slowly over medium-low heat for 15 to 20 minutes
