Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup Coca-Cola
- 1/4 cup buttermilk
- For Frosting:
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1/4 cup Coca-Cola
- 1 tsp vanilla extract
- For Assembly:
- Mason jars
- Vanilla ice cream
- Maraschino cherries
Instructions:
Warm up the oven to 350F 175C and put cupcake liners in a muffin tin
Mix the flour, baking powder, baking soda, and salt in a medium-sized bowl with a whisk
Put away
Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy
Adding the eggs one at a time and mixing them in is the next step
Mix the dry ingredients with the wet ones, adding the Coca-Cola and buttermilk in turns
Mix the dry ingredients in at the beginning and end, until they are just combined
Fill each cupcake liner about two thirds of the way to the top with batter
Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
While the cupcakes are baking, make the frosting by beating the softened butter, powdered sugar, Coca-Cola, and vanilla extract together until the frosting is light and fluffy
After the cupcakes have cooled, put the Coca-Cola frosting on top of them
Cut each cupcake into smaller pieces and put a layer of cupcakes at the bottom of each Mason jar to make the Coke Float Cupcakes in a Jar
On top of the cupcake layer, put a scoop of vanilla ice cream
Put more cupcakes and ice cream on top of each other until the jar is full
Add a maraschino cherry on top to finish
Put the jars in the fridge until youre ready to serve them
