Ingredients:
- 1 lb 450g boneless chicken breast, cut into 1-inch cubes
- 1 lb 450g beef sirloin, cut into 1-inch cubes
- 1 lb 450g large shrimp, peeled and deveined
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 8-10 wooden skewers, soaked in water for 30 minutes
- 2 cloves garlic, minced
- 1/4 cup 60ml olive oil
- 2 tablespoons 30ml lemon juice
- 1 teaspoon 5g paprika
- 1 teaspoon 5g cumin
- 1 teaspoon 5g coriander
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
In a bowl, combine the minced garlic, olive oil, lemon juice, paprika, cumin, coriander, salt, and pepper to make the marinade
Thread the chicken, beef, shrimp, bell peppers, and red onion alternately onto the soaked wooden skewers
Place the skewers in a shallow dish and pour the marinade over them
Make sure the skewers are evenly coated
Cover and refrigerate for at least 30 minutes, or up to 2 hours, to marinate
Preheat your grill to medium-high heat
Grill the kabobs for about 10-12 minutes, turning occasionally, or until the meat is cooked to your desired level of doneness and the vegetables are slightly charred
Remove the kabobs from the grill and garnish with fresh parsley
Serve hot with your favorite dipping sauce or over a bed of rice
