A refreshing and flavorful pasta salad inspired by the classic flavors of bruschetta, featuring tomatoes, basil, garlic, and balsamic vinegar. Perfect for picnics, potlucks, or as a light summer meal.
Ingredients:
- 8 oz
- rotini pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup diced red onion
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 cup fresh mozzarella balls, halved
Instructions:
As directed on the package, cook the pasta
Once its done, drain it and run cold water over it to cool it down
Put the cooked pasta, cherry tomatoes, red onion, basil, parsley, and minced garlic in a large bowl
Add olive oil, salt, and pepper to a small bowl and mix them together with a whisk
Add the dressing to the pasta and toss everything together
Add the fresh mozzarella balls slowly
Put it in the fridge for at least 30 minutes before serving so the flavors can mix
