Ingredients:
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup vegan butter, melted
- 1 cup non-dairy milk such as almond or soy milk
- 2 teaspoons apple cider vinegar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 cup chopped walnuts or pecans optional
Instructions:
Preheat the oven to 350F 175C
Grease a 9-inch square baking pan
In a small bowl, mix the non-dairy milk and apple cider vinegar
Let it sit for a few minutes to curdle
In a large mixing bowl, combine the flour, brown sugar, baking powder, baking soda, salt, and 1 teaspoon of cinnamon
Add the melted vegan butter and the non-dairy milk mixture to the dry ingredients
Stir until well combined
In a separate small bowl, mix together the remaining teaspoon of cinnamon with the chopped nuts if using
Pour half of the batter into the prepared baking pan
Sprinkle half of the cinnamon-nut mixture over the batter
Pour the remaining batter over the cinnamon-nut layer, then sprinkle the rest of the cinnamon-nut mixture on top
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean
Allow the coffee cake to cool slightly before serving
