Red Curry Wonton Soup with Zucchini Noodles

This Red Curry Wonton Soup with Zucchini Noodles is a great mix of tastes. The spicy and rich red curry broth goes well with the tasty pork wontons and the crisp zucchini noodles. You can make this easy-to-make soup that tastes like Thai food and is super comforting.

Ingredients:

  • 1 pack wonton wrappers
  • 200g ground pork
  • 2 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 4 cups chicken or vegetable broth
  • 1 can 400ml coconut milk
  • 1 small zucchini, spiralized into noodles
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish
  • Sliced green onions, for garnish

Instructions:

In a bowl, mix ground pork, minced garlic, and red curry paste until well combined

Lay out wonton wrappers and place a teaspoon of pork mixture in the center of each wrapper

Wet the edges of the wrappers with water and fold them into desired wonton shapes

In a large pot, bring chicken or vegetable broth to a simmer

Add coconut milk and stir

Gently add wontons to the simmering broth and cook for about 5 minutes or until they float to the surface

Add zucchini noodles to the soup and cook for another 2-3 minutes until they are just tender

Season the soup with soy sauce, fish sauce, and lime juice

Adjust seasoning according to taste

Serve the soup hot, garnished with fresh cilantro and sliced green onions
