A hearty and nutritious soup made with sweet potatoes and kale, cooked slowly to enhance flavors and textures.
Ingredients:
- 2 large sweet potatoes, peeled and diced
- 1 bunch kale, stems removed and chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can 14 oz diced tomatoes
- 1 can 14 oz coconut milk
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions:
You can put sweet potatoes, kale, onion, garlic, vegetable broth, diced tomatoes, coconut milk, cumin, and paprika in a slow cooker
Make sure to stir everything together well
To make sweet potatoes soft, cook on low for 6 to 8 hours or high for 3 to 4 hours
Before you serve, add salt and pepper to taste
