Ingredients:
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1/4 cup Thai red curry paste
- 1 cup coconut milk
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup sliced jalapeos
- 1 cup fresh cilantro leaves, chopped
- 1 bag of your favorite tortilla chips
- Salt and pepper to taste
- Cooking oil for sauting
Instructions:
Cooking oil should be heated over medium-high heat in a large skillet
Add minced garlic and chopped onions
Saut the onions until they become translucent and fragrant
Using a spatula, break up the ground beef as it cooks until it is browned
Add Thai red curry paste and diced red bell pepper
Simmer for an additional two to three minutes
Add the coconut milk and thoroughly stir to blend
Simmer the sauce for five to seven minutes, or until it slightly thickens
To taste, add salt and pepper to the beef mixture
Set the oven temperature to 175C 350F
Evenly distribute the tortilla chips on a sizable baking sheet
Evenly distribute the hot Thai beef mixture over the chips using a spoon
Over the steak and chips, scatter shredded mozzarella and cheddar cheese
After putting the baking sheet in the oven, bake it for ten to twelve minutes, or until the cheese is bubbling and melted
Take out of the oven and top with fresh cilantro leaves and sliced jalapeos
Serve hot as a flavorful and piquant Thai take on traditional nachos
