Easy Low Carb Breakfast Casserole

This easy low carb breakfast casserole is packed with protein and veggies, making it a perfect keto-friendly morning meal.

Ingredients:

  • 6 large eggs
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 6 slices cooked bacon, chopped
  • Salt and pepper to taste

Instructions:

Preheat the oven to 350F 175C

In a mixing bowl, whisk together eggs and heavy cream

Season with salt and pepper

Stir in shredded cheddar cheese, chopped spinach, diced bell peppers, diced onions, and chopped bacon

Pour the mixture into a greased 9x13 inch baking dish

Bake in the preheated oven for 25-30 minutes or until the casserole is set and the edges are golden brown

Remove from the oven and let it cool for a few minutes before serving

Slice and serve warm
