This kale burrito bowl is super healthy because it has quinoa, kale, black beans, and avocado, among other healthy foods. Delicious, filling, and healthy, this dish is packed full of flavor.
Ingredients:
- 2 cups cooked quinoa
- 1 cup black beans, drained and rinsed
- 2 cups kale, stems removed and chopped
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions:
Cooked quinoa, black beans, kale, cherry tomatoes, avocado, red onion, and cilantro should all be put together in a large bowl
Mix cumin, chili powder, salt, and pepper with a whisk in a small bowl
Mix the quinoa and vegetables together, then add the dressing and toss everything together
Put the mixture into bowls for serving, and serve right away
