Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 1 lemon, thinly sliced for garnish
Instructions:
On both sides, salt and pepper the chicken breasts
Warm up the olive oil in a big pan over medium-high heat
The chicken breasts should be cooked through and golden brown on both sides after being added to the pan
This should take about 6 to 8 minutes per side
Take it out of the pan and set it aside
Put the chopped onion and garlic in the same pan
For about two to three minutes, or until softened and smelling good, saut
Heavy cream and chicken broth should be added
Turn the heat down to low and let it cook for 5 minutes
Crumble the feta cheese and stir it into the sauce
Keep stirring until the cheese melts and the sauce gets a little thicker
Put the chicken breasts back in the pan and cover them with the sauce
Allow it to cook for another two to three minutes
Before serving, top with lemon slices and chopped parsley
