Ingredients:
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 lb mushrooms, finely chopped
- 1 carrot, grated
- 1 celery stalk, finely chopped
- 1 can 14 oz crushed tomatoes
- 1/2 cup vegetable broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 12 oz pasta of choice
- Fresh parsley for garnish
- Grated Parmesan cheese for serving
Instructions:
Heat olive oil in a large skillet over medium heat
Add onion and garlic, saut until softened
Add mushrooms, carrot, and celery
Cook until vegetables are tender and mushrooms have released their juices
