Ingredients:
- 7 small apples, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Salt and black pepper to taste
- 1 sheet of puff pastry, thawed
- 1 cup grated sharp cheddar cheese
- 2 tablespoons chopped fresh thyme leaves
Instructions:
Preheat oven to 400F 200C
In a large bowl, toss the sliced apples with olive oil, balsamic vinegar, honey, salt, and black pepper until evenly coated
On a lightly floured surface, roll out the puff pastry sheet and cut into 7 smaller squares
Place the squares on a baking sheet lined with parchment paper
Divide the grated cheddar cheese evenly among the squares, leaving a border around the edges
Arrange the seasoned apple slices over the cheese, slightly overlapping
Sprinkle with chopped thyme leaves
Bake for 20-25 minutes, or until the pastry is golden brown and the apples are tender
Serve warm, garnished with additional thyme leaves if desired
